Chicken, grilled: two words, noun first, so the method word is working as an adjective — chicken-that-has-been-grilled. An entire roadside trade is built on them.

ย่าง is the slow, set-back grill for whole birds and thick cuts; contrast ปิ้ง, the same fire but short and near, on a skewer. The Isaan marinade — garlic, coriander root, pepper, fish sauce — is not in the name, and neither is the sticky rice and ส้มตำ that always come with it.

Isaan-style butterflied chicken marinated with garlic, coriander root, pepper and fish sauce, grilled slowly over coals. The holy trinity is gai yang + som tam + sticky rice; no Thai meal formula is more loved.

By the piece or the bird: ไก่ย่างครึ่งตัวครับ (gài-yâang khrêung dtua khráp), half a bird.

Build the trinity in one order: ไก่ย่าง ส้มตำไทย ข้าวเหนียวสองห่อ (grilled chicken, Thai som tam, two packets of sticky rice). Ask for the dip: ขอแจ่วด้วยครับ.

B1 Talk about it

Regional pride talk: the famous styles are ไก่ย่างเขาสวนกวาง (Khao Suan Kwang, Khon Kaen) and ไก่ย่างวิเชียรบุรี (Wichian Buri); naming either marks real interest, and asking หมักอะไร (what is the marinade?) starts a conversation every vendor enjoys.
