Three transparent parts, and the third one traps almost every learner: หวาน is attached to เขียว and names the pale shade of the green, not the flavour of the bowl.
Both middle words describe the paste and neither describes the taste. Any sweetness the bowl does have comes from palm sugar in the pan, not from the name. The protein rides in the last slot (แกงเขียวหวานไก่), and this is one of the แกง that genuinely is a coconut one — แกงส้ม and แกงจืด are not.

Coconut-milk curry built on a paste of fresh green chillies, galangal and lemongrass, usually with chicken, pea aubergines and sweet basil. Eaten over rice, or over rice noodles as ขนมจีน (khà-nǒm-jiin).

หวาน means sweet but names the colour ("sweet green", the pale green of the paste), not the taste; knowing that already puts you ahead. Over noodles: ขนมจีนแกงเขียวหวาน. Not too rich: กะทิน้อย (gà-thí náwy, easy on the coconut milk).

Discuss the balance like Thais do: เค็มไป (too salty), หวานไป (too sweet), เข้มข้น (khêm-khôn, rich and intense, a compliment). แกงเขียวหวานต้องเผ็ด, a green curry must be spicy, is a safe strong opinion.

The kitchen test: a cook is judged on whether the curry แตกมัน (dtàek man, the coconut cream splits and beads oil on top), the sign the paste was fried properly. Praise a home cook with แกงแตกมันสวย and you have said something only insiders say.
