Rice, fried. The method comes second, which tells you the cook thinks of this as a rice dish rather than a stir-fry — and the variable protein goes on the end, as in ข้าวผัดปู, crab fried rice.
This is the cleanest illustration of the hub's word-order rule. ข้าวผัด is rice-that-has-been-fried, a rice dish; ผัดกะเพรา is a stir-fry, with the rice assumed rather than named. Same two kinds of word, opposite order, different dish.

Thai fried rice: jasmine rice, egg, onion, often Chinese sausage or crab, seasoned lightly and served with cucumber, lime and น้ำปลาพริก (fish sauce with chillies) on the side. The dish for tired stomachs and picky children.
Spice none The safest dish in the country: season it yourself with the condiment tray.
What is in it Day-old jasmine rice, egg, garlic, onion, spring onion; your choice of chicken (ไก่), pork (หมู), prawn (กุ้ง) or crab (ปู); cucumber and lime on the side.
Vegetarian and allergies Easy vegetarian: ข้าวผัดผัก (khâao-phàt phàk, vegetable fried rice), and ask ไม่ใส่น้ำปลา (no fish sauce) for strict veg.
Say it at every level
A1.1 Order it
ข้าวผัดไก่ครับ (khâao-phàt gài khráp), chicken fried rice. Swap ไก่ for หมู, กุ้ง or ปู.
A2 Make it yours
The condiment ritual: squeeze the lime over, spoon on a little น้ำปลาพริก (náam-bplaa phrík). Ask for extra: ขอน้ำปลาพริกหน่อยครับ. Fried egg on top: ไข่ดาวด้วยครับ.
B1 Talk about it
Crab fried rice, ข้าวผัดปู (khâao-phàt bpuu), is the connoisseur order; say ปูเยอะไหม (bpuu yóe mǎi, plenty of crab?) and you sound like you have ordered it before.
C1 to native Own it
ข้าวผัดอเมริกัน (American fried rice, with ketchup, raisins, hot dogs and fried chicken) is a Cold War relic invented for US airmen; Thais order it with a wink of nostalgia. Knowing its story is dinner-table capital.
