แกง is the only part that follows the rules. มัสมั่น is a paste name and is not analysable in Thai — the dry spices it stands for, cardamom, cinnamon, star anise, are exactly what other Thai curries do not use.
มัสมั่น does not break into Thai parts. It is generally taken to come from a word for Muslim — this site's own page puts it plainly, คำว่ามัสมั่นมาจากมุสลิม — matching the Thai-Muslim kitchen the dish belongs to, though the exact route the word travelled is not something to state with confidence. Say borrowed, name the Muslim connection, and stop there.

A slow, rich Muslim-Thai curry of braised beef (or chicken) with potatoes, onions and roasted peanuts in coconut milk, flavoured with dry spices, cardamom, cinnamon, star anise, that mainland Thai curries do not use. Regularly tops "world's best dish" lists, to Thai amusement.
Spice mild The gentlest Thai curry: warm spices rather than chilli heat.
What is in it Beef or chicken braised soft, potato, onion, roasted peanuts, coconut milk, massaman paste (dried chillies plus warm spices), tamarind, palm sugar, fish sauce.
Vegetarian and allergies Meat-braise by nature; vegetarian massaman with tofu and extra potato exists at tourist-facing places and is genuinely good.

A1.1 Order it
มัสมั่นเนื้อครับ (mát-sà-mân néua khráp), beef massaman, or ไก่ (gài) for chicken. With rice: ราดข้าว.
A2 Make it yours
Ask the texture question that matters: เนื้อเปื่อยไหม (néua bpèuay mǎi, is the beef falling-apart soft?). หวานไปนิด (a touch too sweet) is the most common honest verdict.
B1 Talk about it
Its story is dinner conversation: a 17th-century Persian-influenced dish of the Muslim south, แขก cooking absorbed into the royal kitchen. คำว่ามัสมั่นมาจากมุสลิม, the very name comes from "Mussulman".
C1 to native Own it
There is a landmine to know: the classic royal poem praising massaman compares it to a beloved, and quoting แกงมัสมั่นเหมือนแกงแก้วตา is the highest-register food flattery in the language. Also the running joke that CNN rates it #1 every few years and Thai Twitter answers ต่างชาติเพิ่งรู้จักเหรอ, "foreigners only just found out?".
