Pork, and a borrowed word. หมู is ordinary Thai; สะเต๊ะ came in from elsewhere and is not built from Thai parts.
สะเต๊ะ is borrowed the way โรตี is, from the Malay-Indonesian dish this one descends from — an origin this site states plainly. The Thai-Muslim strand sells ไก่สะเต๊ะ; the pork version on a Bangkok pavement is what the Thai-Chinese trade made of it, which is why หมู is the part that changes. The peanut sauce, the อาจาด pickle and the toasted white bread are all outside the name.

Turmeric-marinated pork skewers grilled over charcoal, served with peanut sauce and อาจาด (à-jàat), a quick cucumber-shallot-chilli pickle in sweet vinegar. Malay-Indonesian by ancestry, Thai-Chinese by adoption, and toasted white bread on the side because Thailand decided so.
