One word, and it is the name of a paste rather than of a method or an ingredient. It does tell you thick and dry rather than soupy, but only once you already know that.
The origin is disputed. Several stories circulate — among them a link to Penang and a link to an old Thai word for sitting cross-legged, describing how a bird is trussed — and none is settled. Do not pick the prettiest one. Learn the name whole: it means this paste, thick and clinging, sweeter and nuttier than a standard red curry, finished with shredded kaffir lime leaf. Note it usually appears without แกง in front of it.

A thick, dry-ish red curry, more paste and cream than sauce, clinging to slices of pork or beef, finished with shredded kaffir lime leaf. Sweeter and nuttier than standard red curry, with ground peanuts in the paste.
Spice medium Warmer than massaman, tamer than green.
What is in it Panang paste (red chillies, galangal, peanuts), thick coconut cream, pork or beef slices, kaffir lime leaf, palm sugar, fish sauce. Little or no vegetable: this is a sauce dish.
Vegetarian and allergies Shrimp paste in the paste, as usual; tofu panang at เจ places.

The distinguishing ask: พะแนงต้องข้น (it must be thick); if it arrives soupy, you may fairly say น้ำเยอะไปหน่อย (a bit too much liquid).

Distinguish curries out loud, the favourite菜 no - the favourite comparison game: พะแนงหวานกว่าแกงเผ็ด แต่ข้นกว่า (sweeter than red curry, but thicker). Being able to SAY the differences is B1 food Thai in a sentence.
C1 to native Own it
Old-school cooks stripe coconut cream over the top and call the flourish ราดหัวกะทิ; noticing it (หัวกะทิด้านบนสวย) reads as someone who watches hands, not menus. หัวกะทิ, "first-press cream", is also slang for "the cream of the crop", the top students, and the food metaphor lands because of dishes like this.
